Sauteed Grouper and Pear Slaw
Ingredients:
The Fish-
Grouper or Grouper Cheeks if possible (substitute any white fish that you like)
Olive Oil (2 Tablespoons)
Butter (2 Tablespoons)
Garlic Powder
Limes (2)
Salt and Pepper
The Slaw-
Apples (2)
Pears (4)
Mayo (1/4 Cup)
2 Tablespoons White Vinegar
Celery Seed (1 Teaspoons)
Sugar, Salt, And Pepper (A pinch of each)
Heat oil and butter in a non stick pan. Sprinkle both sides of the fish with garlic powder, salt and pepper. Don't flip until a nice crust has been formed then cook until the fish is firm to touch (approximately 5 minutes a side). Remove from the heat and squeeze the lime over. Don't let it rest for more than 5 minutes before service.
Buy pears that aren't ripe and apples that are ripe. Clean and thinly slice the apples and pears. Combine all ingredients. Adjust seasoning by adding a touch more sugar, salt or celery seed as needed.
